Zucchini spaghetti with creamy pesto and Happy Ocean Tyuna - fresh, healthy & delicious
Ingredients
For the zoodles:
- 1.5 medium-sized zucchini (about 400g)
- a bit of salt
For the sauce:
- 1 pack of Happy Ocean Tyuna
- 1 tbsp olive oil
- 1 clove of garlic
- 250 g cherry tomatoes
- ½ tbsp pesto of your choice
- Salt pepper
- Thyme, oregano, basil
- 20 g pine nuts
preparation
Zoodles
Wash, dry and cut zucchini into strips. If you have a spiralizer, you can use it to shape the zucchini into “spaghetti” shapes.
If you particularly want real pasta, you can add this step:
Spread the zucchini strips on a clean kitchen towel, sprinkle with salt and leave to rest. The salt removes the water from the zucchini. After about 30 minutes, wash the zucchini strips with water and carefully dab them with a kitchen towel.
Tomato sauce
Drain Happy Tyuna. Fry the garlic with the pine nuts in olive oil. Add cherry tomatoes, pesto and basil. Let everything simmer.
Add the zucchini pasta and let it sit for about 10-15 minutes. Season with salt and pepper - happy eating!
